In this article we will explain everything you should know about the tomahawk steak, the best grilling techniques, the ideal core temperature and the correct seasoning and preparation .

What is a Tomahawk Steak?

The Tomahawk Steak is a large ribeye steak with a long, exposed bone that resembles the handle of a tomahawk axe. This is where the name comes from. It is cut from the front back of the beef, more precisely from the prime rib. Tomahawk steak is known for its marbling, which gives the meat incredible flavor and tenderness.

Basics of grilling tomahawk steak

Preparation of the steak

About an hour before grilling the tomahawk steak, you should remove it from the refrigerator so that it comes to room temperature. This ensures even cooking.

The right grill temperature

The ideal grilling temperature for a tomahawk steak is around 230-260 degrees Celsius . To cook a perfect steak, it is important to have a 2-zone grilling option by keeping one side of the grill on high heat and the other on low heat. The meat should first be grilled on the high heat side and then finished cooking on the low heat side.

The ideal core temperature

The correct core temperature is crucial for a perfectly prepared tomahawk steak. Here are the guidelines for the different degrees of doneness:

  • Rare (bloody): 50-52 degrees Celsius

  • Medium rare (pink): 54-56 degrees Celsius

  • Medium (half cooked): 58-60 degrees Celsius

  • Medium well (well done but juicy): 62-64 degrees Celsius

  • Well Done (very well done): 66-68 degrees Celsius

The best way to check the core temperature is to use a meat thermometer. Pierce it from the side in the middle of the thickest part of the steak without touching the bone.

Preparation options and seasonings for a tomahawk steak

Rub seasoning

A dry marinade, also known as rub seasoning, consists of a mixture of salt, spices and herbs that is rubbed onto the meat before grilling. A classic rub seasoning blend for tomahawk steak consists of coarse sea salt, freshly ground black pepper and garlic powder. This combination brings out the natural flavor of the meat without overpowering it. With our rub seasoning mixtures, rubbing is very easy - because these specialties contain all the ingredients for the perfect rub. Simply rub in and you're done!

Herb butter

Herb butter is often used to refine the tomahawk steak. You can make your own herb butter by mixing softened butter with finely chopped fresh herbs such as rosemary, thyme and parsley. Add some lemon juice and garlic to round out the flavor. Melt the herb butter on the hot steak just before serving for a delicious taste. For uncomplicated enjoyment, simply use our herb butter blend.

marinade

A marinade always consists of a mixture of a little oil, vinegar and spices. Which exact ingredients you use is entirely up to your creativity. For example, you can use a mixture of olive oil, balsamic vinegar, garlic, rosemary, thyme and mustard. Cover the tomahawk steak with the marinade of your choice and let it sit in the refrigerator for at least 4 hours. Be sure to drain the steak and wipe off any excess marinade before grilling to avoid flaming.

Prepare tomahawk steak on the gas grill

If you don't want to use a charcoal grill, you can also cook a tomahawk steak on a gas grill. Just do the following:

  • Preheat the gas grill : Turn on your gas grill and allow it to preheat for about 10-15 minutes to ensure even heat distribution. Make sure grill grates are clean to prevent meat from sticking.

  • Grill the steak : Place the tomahawk steak on the high heat side of the grill and grill for about 2-3 minutes per side to achieve a nice crust. Then place the steak on the low heat side and continue grilling until the desired core temperature is reached. Rotate the steak every few minutes to ensure even cooking.

  • Let it rest : After the tomahawk steak has reached the desired core temperature, remove it from the grill and let it rest for about 10 minutes. This allows the meat juices to distribute throughout the steak and keeps it juicy and tender.
