Ingredients:
500 g chicken breast fillet - finely diced, 2 tsp curry powder, 4 tbsp Wajos red Thai curry oil, 1 garlic clove - finely chopped, 30 g ginger - finely chopped, 1 red onion - diced, 200 ml coconut milk, 100 g soy sprouts, 1 lime - of which the juice, coriander, chili, salt and pepper.
Preparation:
Mix the red Thai curry oil with the curry powder and marinate the chicken breast cubes for about 30 minutes. Then fry the onions in a hot pan, then add the garlic and ginger and mix everything together. Add the coconut milk, bring to the boil briefly, then add the bean sprouts to the wok, stir and let sit briefly. Finally, refine the curry with lime juice, season with pepper and salt and garnish with chili rings and fresh coriander. Our tip: Before serving, add some red Thai curry oil over the curry to make the taste even more intense and delicious. We recommend rice as a side dish, which you can also easily refine with a little red Thai curry oil.
