White, clear grappas are stored in glass or stainless steel tanks to avoid changes in taste and color while at the same time intensifying the typically delicate character.
Grappas that are stored in wooden barrels - predominantly oak barrels - for refining, in turn absorb wood tannins. They give them an amber tint. This storage gives them a fuller, more complex flavor. The long maturation period also reduces the bitter notes. This is how grappas like this are created: soft and strong in taste, with gentle fruity notes.
